Recipe of the Month: Summer Salad ala Doc...Forget iceberg lettuce! Start with fresh greens with spinache, endive, dandylion or any fresh greens loaded with minerals and vitamins. Wash it well and break up into bite-sized pieces. You will need 4 to 6 cups total. Set it aside for now.Add 1 cup of slivered or chopped almonds, 1 cup whole grain dried chow mein noodles, 1/2 cup of green soy beans or fresh green peas, 1/2 cup of chopped red onion, 1/2 cup of sunflower seeds, 1/2 cup of dried cranberries.The dressing is so easy: mix 1.2 cup of olive oil with 1/4 cup of raspberry vinegar, 2 teaspoons of fresh cilantro or chopped basil, 1 to 2 teaspoons of chopped garlic, 1 teaspoon of lemon zest....mix all in a food processor or blender until thoroughly mixed.Toss the dressing with the green and all of the fixings.It serves four lrage salads with fewer than 328 calories per serving.![]() |
